Today I want to a bit show-off about my first attempt to make Cannelés. Cannelés is a famous French dessert. You can found it almost just like macaron. At Jakarta, you can found also this dessert, mostly on the café or restaurant with French ambiance. One of the café that I knew and I think a good one is Cafe Sophie Authentique. I used to go there with my good friend from Volvo (or ex Volvo because now only one left as Volvo employee). I also well remember the name because it's just like the name of my good friend, Sophie. Eventhough this dessert is soo good, the price itself a bit pricey for Jakarta area. The box of 4 small cannelés has price around 2 EUR (so around 50 centimes EUR each). The grand one is about 1,3 EUR. I remember buy this dessert on 4, and we ate one each person. So pricey … or not ? Just last friday I spent my last 10 EUR to buy the mould cannelés of silicone. I search the idea and recipe on internet for cannelés and found one of the recipe from Marmiton (this site really high recommended !). Actually there are two recipes that interested me. But one of them, should let the pasta on refrigerator for 24 hours ! one day ??? How come .. I mean, this is my first attemps, and I should wait a day after to try it ? Well no … So, I used the first one that only need 1 hour minimum the pasta on refrigerator. That's also already long for me. Fortunately I should cook on the oven two times, because I had small oven (max 1) and the mould of cannelés only consist 30 mini cannelés. Well, 30 already a lot actually, right ? The original recipe it called Cannelés bordelais. So …, here we go … on the mark, ready, à cuisiner .. Ingrédients (for around 45 mini cannelés) :

How to Cook :
On the recipe Cannelés bordelais, they use the mold on alumunium. I used the mold from silicone, thus I should reduce the temperatur of the oven. If not, they said that you should oven the cannelés at first for 12 minutes on temperatur 240 oC. My mold of cannelés also consist of 30 mini cannelés. Because I only had one small oven and one mold consist of 30 mini cannelés. I should bake two times. So meanwhile, I let the dough again on the refrigerator.
So I can compare the first cannelés and the second one. And absolutely right that the longer you let your dough of cannelés Inside the refrigerator, the more Brown and crispy the external form of those cannelés. So perhaps, the other recipe from marmiton that said to let the dough 24 hours on the refrigerator is true, to make the cannelés more brownish and crispy. Whatever it is, I still loved my cannelés. I hope to make it for another time.
