My menu this time is Ratatouille. Ratatouille is a French provençal stewed dish. You can found this as a side dish when you eat steak/ribs/grill poulet (grill chicken)/confit canard (duck confit) at the restaurant, beside another side dish like frit (fries), haricot vert (string bean), purée (mash potato) or pâtes (pasta). If you prefer vegetables, then ratatouille and haricot vert is the option. Another Ratatouille that you might know is one of the Disney-Pixar famous cartoon movie with the same title, "Ratatouille". The story is about a chef that can't cook (like me) if not because helped from a mouse, Remy, who apparently really good at cook. As I said, Christmas/Noël preparation took many of my times, thus I had no time to write anything at all. In the spirit of Christmas, I try to make Apple Crumble (Crumble aux Pommes) for the first time. I got the recipe from flyer of Aldi. Aldi is one of supermarket that you can found around France. So, I found the recipe and cut it and kept it because I am interested to make it one day, and those one day is for this Christmas. We had all family come and stay to our house (my mother in law and my husband's sister and her family, then we prepare all. At first I thought it was fast to make apple crumble, and apparently not (LOL). So I ask my husband to help me, and he help made the pasta. Here is the recipe ... Ingredients (for 6 up to 8 persons) : - 1kg red Apple - 150gr flour - 200gr sugar - 100gr butter - 50ml water - 3tbsp sugar - Cinnamon powder - Vanila - a bit butter to lubricate the baking pan Preparation : - Peel the apple and cut it on small cubes around half cm each. Put it separate. - Lubricate the baking pan using butter on all their surface. Put it separate. - Pre-heat the oven at 200°C for around 10 minutes. How to Cook : - Using huge pan, cook apple with 50ml water and add 3tbsp of sugar on medium heat. - Mixed well apple and let them cook for around 5 up to 10 minutes. - Take out the apple and pour it on the baking pan that already lubricate with butter. - Add cinnamon powder on top of all apple surface. Put it separate. - Using bowl, mix butter and sugar. You can use wooden spoon or fork or table knife or your hand to mixed them. - Add vanila and mixed them well. - Add flour and mixed them well until on the shape of pasta and all ingredients mix well. - Pour the mixed of pasta on top of apple. - Put it on the oven 200°C for around 30 up to 45 minutes. - Take it out and serve it on the plate. Bon Appétit ! It was not bad at all for the beginner. Everybody said it was delicious. My sister in law suggest me to use clear round pyrex next time. With clear pyrex, I can observe well the apple crumble while it was on oven.
This Crumble aux Pommes (Apple crumble) is good for dessert. We enjoy it on the dinner before Christmas. You can make it for Christmas dinner as well. (/fin) I directly write before I forgot how to cook it, because I made many adjustment on this original dishes. Well, Christmas is around the corner, and the weather is more and more cold here. Today we had 2°C and fog through the day. My lamp solaire (solar lamp) for Christmas outside the house is not as bright as usual because not much sun today. I ended this weekend (last Advent) to try one recipe from the new cook book that my mother in law bought for me. The title of the book is "Cuisine Super Facile" (or "Really Easy to Cook"). This recipe book is really easy to understand, with lots of picture (include picture of the ingredients, thus you will be easier to follow) and big letter alphabet, just like book for the children. Anyway, when browsing from this book, I found one recipe of Frittata. The original recipe actually "Frittata aux Courgette", but because of I still have part of Aubergine (Eggplant in English) and Jambon Blanc (Cooked Ham in Engish), and lack of eggs, then I improvise a bit the recipe for 2 persons and with additional ingredients. Moreover, the time for cook is not just like they wrote on the book (only 5 minutes in oven). I need up to 45minutes in total to oven this frittata. But I can tell, the taste, I can tell I can proud of it :) Ingredients (for 2 persons) : - half up to 1 zucchini - half eggplant - 2 cooked ham - 35gr grated parmesan cheese - 4 eggs - 2tbsp olive oil - 2 garlic - 1tbsp fresh cream Preparation : - Grated the zucchini and put it separate. - Peel the eggplant and cut it on small cube. Put it separate. - Cut cooked ham on small pieces. Put it separate. - Peel garlic, crushed it and cut it on minced. Put it separate. How to Cook : - Crack the eggs on the bowl and whisk them well. - Add fresh cream, salt, pepper and grated parmesan cheese and mixed them well. Put it separate. - Using frying pan, heat olive oil for half minutes then add eggplant. Cook for around 5 minutes. - Add cooked ham and garlic and cook again until eggplant almost cook around more 5 minutes. - Add zucchini, salt and pepper and cook again for around 10minutes. - When zucchini and eggplant is well cook, add mixed of eggs-fresh cream-parmesan cheese inside and cook again for another 5 minutes while continue to stir it well. - Pour the mixture inside the ceramic bake-ware and put it on the oven 180°C for around 45 minutes. - Check whether the frittata well cooked. If necessary you can add more minutes if you check it is not well cooked. - After frittata well cook, take out from oven and served it on the plate. Bon Appétit ! So far based on my experience, 45 minutes is enough to oven the frittata, but you can check from time to time using skewers (we call tusuk sate in Bahasa), to check and make sure your frittata well cook and dry.
Btw, I just realize when I wrote this that frittata is like Italian omelette :) Aparently my cook not far from Asian food and Italian food; (/fin) This recipe inspired by Capcay. Capcay is a dishes from vegetables (majority) that you can found at Jakarta. It had the name like from Chinese, but actually it comes from Indonesia. Perhaps long long times ago, our anchestor from Chinese (Indonesian anchestor comes from many places such as Malay, Chinese, India and Arabian) bring the way of cooking that comes now as local dishes. When people are on diet, many times they makes Capcay as one of favourite dishes, because most of it are vegetables, the other parts just additional that can be added like shrimp, chicken or meatball. Then their names will follow additional ingredients inside. For example if you add chicken then it called Capcay Ayam (Ayam = Chicken in Bahasa), and if you add many seafood inside such as shrimp, fish meatball, then it called Capcay Seafood. |
