Hello October ! Hello Autumn ! Yes, now we are in October, where outside starting to be cold. I even not expect this cold when out for the Church this morning. Well, I think this recipe is good to cold situation like now. This recipe, actually I re-create it. I check on the Google how to cook coconut + beef + potatoes + carrot, and found out one Indonesian recipe called Resep Kentang Balado Santan from cookpad. So, I start from there, and change here and there, but my recipe inspired by those recipe. But then the result (my husband prepare for the worst), eventhough not good appeal (so what he calles it, merci mon amour), he said it was delicious. And before I forget what ingrédients I put Inside (many time, where there's delay time between me cook and me writing it, I almost forgot how I can be on those stage to create that dishes), I decide to write it right away. Then I search the name for my recipe (I do not want to use the same name like the recipe that I inspired by), I ended up between name it Goulash (actually my husband say it was kinda like a Goulash) and Beef Stew. After check out as well on Wikipédia, which best translate my recipe, I decide to use Beef Stew at the end. Not give lots of prolog, here is my Coconut Beef Stew recipe .. Ingredients (for 2 persons) : - 150 - 200gr beef meat - 1 red onion - 2 shallot - 1 garlic - 200ml coconut cream - 2 up to 3 carrots - 5 up to 6 small/medium potatoes - 1 tomate - 2tbsp olive oïl - 100 - 150ml water - 1 tea spoon ginger powder (or you can use 1cm fresh Ginger) - 1 up to 2 tea spoon nutmeg powder - 1 up to 2 tea spoon lemongrass powder - Salt & Pepper Preparation : - Peel onion and cut it on small slice. Put it separate. - Peel shallot, garlic and tomate and blend it with blender or crushed it until it become ground spices. Put it separate. - Peel carrot and cut it on round. Put it separate. - Peel potatoes and cut it on cubes (if possible big cubes). Put it separate. - Cut beef meat on cubes. Put it separate. - Using sauce-pan, cook carrots and potatoes on hot salty boil water around 20 minutes. Preserved 100 - 150ml water from that cooked potatoes and carrot, then drained it and put cooked carrots and potatoes separate. How to Cook : - Using sauce-pan, pre-heat olive oïl on medium heat, then add onion. - Cook until onion half cook. - Add mix of ground spices (tomate+shallot+garlic), add salt, Pepper, Ginger, nutmeg and lemongrass and mix them well around 1-2 minutes. - Add beef meat and mixed them well. Cook again until meat well cooked. - Add coconut cream, carrots, potatoes and bay-leaves and let them cook them again while stir it for time to time for around 20 minutes. - Add water Inside and cover the sauce-pan and let it cook again for around 15 - 20 minutes or until coconut cream broken and oily. - Taste it and add Salt & Pepper again if necessary. - Take out and serve it just like that or you can serve it with the rice. Bon Appétit ! If you like, or if you're Indonesian, you can enjoy this Coconut Beef and Stew with rice. But If I can suggest, if you want to eat it with rice, you can avoid to add potatoes and instead you can change it with other vegetables like bell-pepper.
For us, because I already use potatoes, thus we enjoy our Coconut Beef Stew like it is, and those recipe above is really enough for our hungry stomach. So, with or without rice, you decide. Enjoy ...., Bon Appétit .. Smakkelijk eten .. (/fin)
