When you have many eggs in your refrigerator, you may think to make frittata. So do I, at the beginning, but then I have an obstacle to do that. We have no oven to bake here, just a microwave. Thus another thing that crossed on my mind is to make Carbonara pasta. This time I googling and get inspired by recipe from Jamie Oliver. His recipe called Beautiful Courgette Carbonara. He use penne, but I choose to use spaghetti insted. With adjustment here and there, here's my recipe ... Ingredients (for 2 persons) : - Spaghetti pasta for 2 persons - 1 Courgette/Zucchini - 2 eggs - 2-3tbsp fresh cream - 2-3tbsp parmesan cheese - 100gr pork meat - 2tbsp olive oil - Black pepper - dry parsley - dry rosemary Preparation : - Using saucepan, cook spaghetti on salty boil water for around 10-13 minutes (all dente, as remark on the package). Keep 25cl water from pasta aside and drained the spaghetti. Add a bit olive oil to avoid spaghetti stick one another. Put it separate. - Peel courgette/zucchini, cut it half and cut it on sliced. Put it separate. - Cut pork meat on small sliced (in French we called it Lardon); Put it separate. - Crack the eggs on the bowl and whisk them well. Add fresh cream and parmesan cheese. Whisk and mixed them well. Put it separate. How to Cook : - Using fryingpan, heat olive oil for hald second and add the pork meat inside. - Add black pepper, rosemary and cook again slice pork half cook. - Add courgette/zucchini and cook again until the meat well cook and looks golden and crisp. - Add pasta inside the meat, courgette and add a bit of water from pasta inside. Mixed them well. - Take out fryingpan from the heat and add mixed of whisk eggs-fresh cream-parmesan cheese. Mixed the pasta well. You can add again a bit of water from pasta if the pasta is too thick and parmesan cheese if pasta is too liquid. - Mixed them well, take out and served it on the plate. - Add dry parsley on top of the pasta for garnish. Bon Appétit! Just like on Jamie Oliver website, when you add the mixed of eggs-freh cream-parmesan cheese, make sure you take out your pan out of heat/stove, if not, you'll have a scramble eggs instead.
If you notice, I use all the eggs (not only the yolks). I do it to avoid I waste the white eggs. The result with the whole eggs is still okay I think. I just need to add more fresh cream and parmesan cheese to make the mixed of carbonara more thick. Another thing, I use pork meat. So, it was not halal for my moslem friend, but you can change it with beef or chicken. No worries .. So, please try and enjoy it ! (/fin)
