This is what happen, when you got many fruit from your mother in law and do not have time to eat it all. Then you ended up to think and search idea what to made to avoid it wasted. This is what happen with all apples and prunes I had. Apple normally I make a juice, but how about prunes ? Salad de fruit also another alternative, but I want to make Something different. How about cake ? So, I search at the internet to have idea to make cake from apples and prunes. Apples have many recipes to offer, but prunes, not much. I ended up with website called Genius Kitchen, and this is their Danish Apple & Prune Cake that I adapted on my culinary condition .. Ingrédients (for 2 up to 4 persons) : - 2 up to 3 apples - 6 up to 12 prunes (I only use 6, due to that I had left) - 125 gr butter - 25 gr butter for topping - 170 gr sugar - 8 up to 10 tea spoon sugar for topping - 2 eggs - 1 tea spoon vanila extract - 80 gr flour - 125 ml milk - 1/2 tea spoon baking powder - 2 up to 3 tea spoon cinnamon for topping - a bit butter and flour for smear the baking pan (you do not need this if you use paper cake) Preparation : - Peel apples and cut it on thin sliced, around 1-2 mm. Put it separate. - Peel prunes and cut it on small cubes. Put it separate. - Break the eggs and whisk them well. Put it separate. - Cut butter for topping on shape of cubes. Put it separate. - (optional, if you do not use paper cake) Smear baking pan that used for bake with butter and flour until all parts well covered. Put it separate. Better use round baking pan diameter 30 cm. - Pre-heat oven 190 oC for around 15 minutes. How to Cook : - Put sugar and butter and bowl of mixer and mixed them well. - Add eggs, part of flour, part of milk, vanila and baking powder and mix them well. - Add again part of flour and part of milik little by little untill all mixed (I add flour and milk 4 times). - Round the spatula and make sure all mixed well. - Add prunes Inside and mix them well. - (optional) if you use 3 apples, you can add 1 part of apples Inside or use all for topping (I use all for topping) - Pour all mix batter Inside baking pan. Flatten using spatula. - Place over apples on top of it until all well covered. - Bake cake on oven 190 oC around 40 minutes. - Remove the cake from oven, sprinkle it with sugar for topping, add cubed butter (on each side) and sprinkle with cinnamon. - Put Cake Inside the oven again 190 oC and bake again around 30 up to 45 minutes or until cake well cooked. - Take out baking pan from oven and take out the cake and served it on the plate. Bon Appétit ! This cake is really delicious to eat while hot/warm and you can add whipped cream or vanilla ice cream on top of it.
Unfortunately as you seen, I do not have both of it, but it still delicious to eat just like it. If you like the smell of cinnamon like I do, you can add more cinnamon on top. I do not have round baking pan diameter 30cm, thus I use whatever baking pan I had, and that's the small one that I had (no round baking pan unfortunately), but it's ok. As you see, I serve this cake using handmade ceramic dessert plate from @keramikpuspa5 made by my husband. Those suppose to be a small bowl, but he pressed it too eagerly and become dessert plate. Not bad, still can be used (LOL). Again and again .. (never tired, because it was too awesome!), whenever you have more time to go to Jakarta, go and learn how to made handmade ceramic at Ceramic Warehouse Keramik Puspa at Jl Puspa 5, Kebayoran Baru, South Jakarta. If you ask what the relation between cooking and ceramic, I can tell that your dishes/cooking can be more elevated by presentation and photography. One attribute that can elevate it as well is the plate you use. I usually use whatever plate I have, with my handmade ceramic, it really presented more beautifully. (/fin)
