Mie Godog Tauge or I can translate it as Boiled Noodle with Bean Sprouts is one of Indonesian dishes. The original recipe actually called Mie Godog or sometimes called Mie Godog Jawa. (Jawa = Javanese in English). This recipe I made adapted from recipe Mie Godog Jawa from William Wongso, one of famous Indonesian's Chef that also well known in the world. I just found out that he will be one of exceptional judges for Master Boulangerie 2018 in France, so he is well known Chef in Indonesia and in the world and one of my favorite as well. I bought one of his book : "Flavors of Indonesia". It is an unique book, because not also have recipe Inside from Om Will (that's how he used to be called) but also the stories about spices around Indonesia. I had his book and his signature as well. I even have autograph with him during his launching of those book at Jakarta. It was a rare and wonderful moment, even as how this blog named, boekankoki, he also mention that do not call you as a Chef (for Indonesian) if you can not cook Rendang. Rendang is one famous dishes in Indonesia and to make it is not easy at all, need many spices, and cook for long time. My mom usually made Rendang from night to eat the day after. So, imagine how long it is. So, one of my aim, is to cook Rendang. I wish I can cook it and write it here. This time recipe is not about Rendang, but about Mie Godog. As usual it was inspired by recipe from Om Will, but since I do not have some ingrédients, thus I improvise it. The original recipe use candlenut, many vegetables and eggs, which I do not have. So I improvise using bean sprouts that I think it was not a bad idea at all. So, here is my recipe of Mie Godog Tauge .. Ingrédients (for 2 persons) : - 200 up to 250gr Noodles - 125gr canned bean sprouts - 1 tomate - 1 breast chicken - 3 tea spoon sweet soja sauce - 2tbsp oil - 3tbsp nuts oil - 2 tea spoon sugar - 1 tea spoon Pepper - 2 tea spoon salt - 3 garlic - 6 shallot - 1 cube chicken broth - 1lt water - dry coriander - dry chive - dry parsley Preparation : - Using sauce-pan, cook noodles until half cook (around 2 minutes). Drained it and put it separate. - Using sauce-pan, boil chicken until it well cook (around 15 up to 2 minutes). Take out the chicken and reserved the water of cook the chicken. Cut chicken on sliced. Put it separate. - Peel garlic. Pressed it and cut it on minced. Put it separate. - Peel shallot and cut it on round sliced. Put it separate. - Wash tomate and cut it half, then cut it again half until it become 4 up to 8 pièces (dépends on the size of tomate). Put it separate. How to Cook : - Using wok, pre-heat oil, then add garlic and shallot and cook until it smell good. Add salt, sugar and Pepper. - Add half cook noodle Inside and around 3 up to 4 cup of water used to cook chicken. - Add also bean sprout, dry chive, dry coriander, sweet soja sauce and nuts oïl. Let it simmer. - Add chicken broth and mix them well. - Taste it and add salt & Pepper if necessary. - Last add chicken and tomate Inside. Cook again a bit while. - Take out and serve it on the bowl and garnish with dry parsley. Bon Appétit ! I hope Om Will doesn't mind that I change his recipe. The original recipe use eggs, many vegetables and dry shrimp. But I do not have it, thus I use whatever I had. Original recipe also do not use chicken broth, but I think Something missed from it, that's why I add chicken broth Inside.
So, if you want to know more about many kind of Indonesian food and spices, do read "Flavors of Indonesia"by William Wongso. You will find many taste of Indonesian dishes there. There's also recipe Rendang if you want to try. So, check it out .. (/fin)
