It is a simple menu to eat when you need to cook vegetables for your lunch/dinner. This time I do not refer any recipe, but just know that this combination will made a good wok or a good sauté. Not like usual, I cut all the vegetables (include onion) on big cut size, to make sure it still can be crunchy to eat (if you like), and as you know, I cook it not crunchy but well cook, because my husband like it like that. You can eat this Sauté Courgettes et Poivrons with just rice or with meat like steak or ribs. We eat it with pork ribs that we buy at the restaurant around the corner. So, here is the recipe ... Ingrédients (for 2 persons) : - 1 medium zucchini (or 2 the small ones) - 1 onion - 2 garlic - 1/2 green bell Pepper - 1/2 yellow bell Pepper - 1 cube beef broth - 100ml water - dry Parsley - 2tbsp olive oïl - Salt & Pepper Preparation : - Peel zucchini and cut it on round with 2 - 3 mm thick. Put it separate. - Peel onion and cut it on sliced. Put it separate. - Peel garlic and cut it on sliced. Put it separate. - Take out grain on both bell-pepper, wash it and cut it on sliced around 3 - 4 cm long. Put it separate. - Pre-heat 100ml water and melt beef broth Inside. Put it separate. How to Cook : - Using frying pan, pre-heat olive oïl around 1 minutes, add garlic Inside. - Cook until garlic well smell, then add onion Inside. Cook again until onion half-cook. - Add zucchini and cook again until zucchini half-cook. - Add green and yellow bell-pepper and cook again until bell-pepper half cook. - Add mix of beef-broth on hot water Inside, and mix them well with vegetables. - Taste it and add Salt & Pepper if necessary. - Cook again until all vegetables well cook (if you want zucchini a bit crunchy, you do not need long to cook it). - Add dry parsley and mix them well. - Take out and served it on the plate. Bon Appétit ! I can tell that zucchini and onion is two of vegetables that always ready stock at my home. Bell Pepper as well, but it not last long, thus I need to cook it within 2 - 3 days (max a week) after I buy it.
What you can do as well with zucchini, bell-pepper, onion, you just need to add tomate and (if you like) egg plant to make Ratatoullie. I already wrote once about Ratatoullie recipe.
