This is how if you do not have some of the ingrédients and come up with Something that nearly succeed. I said nearly succeed because with the same ingrédients I can make Risotto as well. This time recipe I found it from internet from goodhousekeeping, with the same title Stuffed Tomatoes with Lean Ground Beef. I have ground beef at home and some of tomatoes, so I search at Google with those two key words and found out this recipe. Eventhough I change some of the ingrédients, for example I use round tomatoes, better to use long tomatoes. Another thing that I change is instead using feta cheese, I use goat cheese (because no feta cheese at home), also there's no Panko, thus I use grated biscotte instead. Perhaps because I have old oven at home, the time to cook this also more longer, but this is a good idea to cook another way of tomate. So, here is the recipe that I adapted from the original one .. Ingrédients (for 2 up to 4 persons) : - 1/2 cup Brown rice - 1tbsp Olive Oil - 1 onion - 150gr minced beef - 1/4 cup mint leaves - 1/2 tea spoon ground cinnamon - 5 up to 6 tomatoes - 50 - 100gr goat cheese - 4 biscotte - Salt & Pepper - dry parsley or dry mint (for garnish) Preparation : - Peel onion and cut it on minced. Put it separate. - Wash all tomatoes and cut it on two. With tea spoon, take out the grain on each of tomatoes and put it aside. - Grated the biscotte and put it separate. - Wash the mint leaves, and cut it on minced. Put it separate. - Cut goat cheese on small cubes around 5mm, and put it separate. - Cook the Brown rice with 1cup of water using rice cooker or sauce-pan. When rice well cook, put it separate. - Pre-heat oven to 220 oC around 15 minutes. How to Cook : - Using frying pan, pre-heat olive oil around 1 minute, then add garlic and onion Inside and cook again around 10-12 minutes of until onion half cook. - Add minced beef, half of mint leaves, cinnamon, salt and Pepper. - Mix them well and cook again around 5 up to 10 minutes or until beef well cook. - Add remaining mint leaves Inside. - When beef well cook, turn off the heat and put it separate. - Take half up to 1 cup pulp of tomatoes, put it on the bowl and chopped it well. - Add well cook rice, goat cheese and mix of well cook meat Inside and mix them well. - Put tomatoes on the bakeware ceramic with cut sided up. - Mount beef feeling on each of tomatoes and sprinkle with grated biscotte on the top. - Mount it until all tomatoes well filled. - Bake tomatoes on the oven 220 oC around 45 minutes, then grilled it around 15 minutes or until crumbs start brownish. - Take it out and garnish it with grated biscotte and dry mint or dry parsley. Bon Appétit ! The original recipe only bake the tomatoes on the oven. Perhaps because mine is old oven, I need to grill it to have the tomatoes brownish and well grilled (the side of tomatoes wrinkle and dry).
So, when you try it, let just oven it first and if the tomatoes not well grilled you might add it to grilled like I did. Another thing, make sure you save part of grained and pulp of tomatoes that you do not use for next cooking (can be for bolognaise sauce or pizza sauce). The same as well for remaining mix of rice-beef, if you still have many, either you can add more tomatoes, or you can bake it as a Risotto like I did. Enjoy ... (/fin)
