I said on my recipe to cook more longer than the original recipe because, on my case, eggplant need more time to cook than if you only use zucchini (like on the recipe original). I cook it on 200 oC, but if the same like the original recipe (180 oC, perhaps you need extra time more to cook).
If you ask me, which version ratatouille I prefer ? Well, personally, if I want to make it fast, I prefer the traditional ratatouille. But the taste, I prefer the version of Tian de ratatouille. One of the benefit the traditional ratatouille, you can cook it with every conditionn of zucchini or eggplant. I mean, sometime I keep zucchini and the eggplant too long and it start to getting mold (we say pouri en française). On that condition, we still can peel and save the good part of zucchini or the eggplant and cook for traditional ratatouilli. But we can not use it for Tian de ratatouilli. Because on Tian de ratatouilli we do not need to peel the zucchini and the eggplant. For sure, we need to use the good forme one ! Other advantages, with traditional ratatoulli, we can prepare before then to cook we just put in on by one after. We can not for Tian de ratatouli, because it need time to assembly it all on the dish. Whatever it is, ratatoulli is one of my preferable recipe. Easy to make and easy to remember !
