I am not a vegetarian, but my doctor suggest me to precaution about my weight, thus I must precaution as well about what to eat. My mother in law always force me to eat salad (LOL). She knew me well that I hate vegetables and I do not like Salad, eventhough I eat them from time to time. This time I had several eggs that need to be finished before 9th January, and several vegetables from last Christmas and New Year's shop at Supermarket, thus I decide to make frittata. From the first and last time I made frittata and the result is satisfaction, I decide to make it again with different ingredients. Last time my frittata is Frittata aux Courgettes, Aubergine et Jambon Blanc (frittata with Zucchini, Eggplant and Smoked Ham, definitely not for vegetarian :) ). This time I will make frittata for vegetarian, consist of : Zucchini, Carrot, Yellow Pepper, Tomate and Mushroom. I mixed the way to make frittata from my previous one and the one that I found out from Google. So, here is my Veggie Frittata recipe .. But first, I warn you, the preparation takes time :) I hope you prepare .. Ingredients (for 2 up to 3 persons) : - 6 eggs - 1 zucchini - 1 tomate - half yellow pepper - 100gr fresh mushroom - 1 garlic - 2tbsp fresh cream - 40gr grated parmesan cheese - 10gr grated emmental cheese - 3tbsp olive oil - 10gr butter - dry parsley - salt & pepper Preparation : - Peel garlic, pressed and cut it on minced. Put it separate. - Wash the zucchini, grated and put it separate. - Peel the carrot, wash it and grated it and put it separate. - Wash the yellow pepper and cut it on small pieces cubes half cm and put it separate. - Clean fresh mushroom using clean tooth brush, and cut it on sliced. Put it separate. - Wash the tomate and cut it on sliced. Put it separate. - Crack the eggs on the bowl and whisk them well. Add salt, pepper, fresh cream and whisk them well again. Last add grated parmesan cheese and whisk them well. Put it separate. - Lubricate ceramic bakeware or pyrex with butter. Put it separate. - Pre heat oven 180°C. How to Cook : - Using frying pan, heat 2tbsp olive oil on medium heat. - Add carrot and yellow pepper and cook on medium heat around 5 minutes. - Add mushroom and 1tbsp of olive oil and cook again until mushroom well cook (around 10 minutes). - Add zucchini, tomate and garlic, mixed them well and cook again for around 5 minutes or until all vegetables well cook. - Add salt, pepper and dry parsley and cook again for another 1 up to 2 minutes. - Add mixed of eggs-fresh cream-parmesan cheese and mixed them well. Cook again for around 3 up to 5 minutes with low heat. - Using ceramic bakeware or pyrex that already lubricate with butter, pour the mixed of frittata batter inside (I use 24cm round pyrex). - Pour emmental cheese on top of the frittata. - Put it on the oven 180°C for 40minutes. - Take it out from oven and served it on the plate. Bon Appétit ! As you see, the preparation really takes time, even I already use grated machine to grate zucchini and carrot (last time I do it manually, dooh ... :p ), so if you really hungry, this dishes is not recommended for you.
But I can tell that result is satisfé. Even I am not a vegetarian, I love this dishes. I think I start to love to cook frittata beside to cook any kind of pasta. I am beginning to master it (my definition of master is when I can cook without seeing the recipe, remember ?). So perhaps you will found out more and more frittata recipe from my experience.
