Today recipe is inspired by many apples I had at home. My mother in law gave us several apples, some already cooked to make Danish Apple and Prune Cake, and rest two actually, but then she gave me another apples (oh Noo ... ). Thus I should cook Something to make sure it was gone by the time she came again to visit us (LOL). So, I search on the internet (again) and found some recipe that I think I can follow, and voila, it was succeed. The original recipe come from another Food and Recipe Blogger Once upon a Chef, and this recipe with the same title French Apple Cake adapted by her recipe. What I add just to have some slice apples on the top just like my previous Danish Apple and Prune Cake, and I do not use Confectioners sugar, because I do not have it. Instead I use sugar and cinnamon on top of it.. So, here is the recipe .. Ingrédients (whole cake for 8 - 12 persons) : - 125g flour - 113gr butter - 1 tea spoon baking powder - 1/4 tea spoon salt - 133gr granulated sugar - 3 small - medium eggs - 1 tea spoon vanila extract - 2 tbsp Rum - 3 apples - 2 up to 3 tea spoon cinnamon - some butter and flour to smeared on the pan - some additional granulated sugar to sprinkle on top of the cake Preparation : - Peel apples, let 2 apples cut on small cubes and 1 apple cut on thin sliced. Put it separate. - Smeared the round pan (around 30cm) with butter and covered it with flour until all part covered. Put it separate. - Pre-heat oven 180 oC around 5 up to 10 minutes. How to Cook : - Put flour, baking soda and salt on the large bowl and whisk them together. - Add butter and granulated sugar Inside and mix them well with hand mixer around 3 minutes. - Add the eggs one at a time, beating it and scrapping down the side of the bowl each time the eggs added. - Mix them well until all eggs added. - Add in the vanila and rum and mix them well until batter well combined. - Last add apples cubes Inside and mix them well with spatula. - Pour the batter Inside the pan that already smeared with butter and flour (to make it unsticky). Make it flatten. - Add thin sliced of apples on top of it until all part covered. - Put it on the oven 180 oC around 60 minutes or until cake well cooked. - Quickly take it out from oven, and sprinkled it with sugar and cinnamon. - Put it again on the oven 180 oC for around 5 minutes. - Take it out from oven and sort it out from pan, cut it and served it on the cake plate. Bon Appétit! I just realized that I did not exactly like suggested on the original recipe (she add mix of flour after all butter-sugar-eggs mixture), but since the last time when I make cake almost all flour spread out when I mix it with hand mixer. Thus this time I mix them slowly and directly mix all with eggs. My husband said that the cake is just like the one made by his Mami (Mami is grandmother in France). Well, I flattered. I never taste Mami's cook, but I heard it was delicious.
